Hello, Tina! I would like to share the recipe for oil-free buckwheat pancakes, it is a healthy low-calorie dessert and my family adores it. I like they are easy to cook, 5 minutes to prepare and around 15 to fry. Only one kind of flour is needed and very few sugars, a spoon of some nice honey will be wonderful to sprinkle the pancakes before serving as well as berries and cinnamon. I’m sure you will enjoy the decor improvising 🙂 The most important thing is the buckwheat pancakes are free of oil and low in calories.

Take 120 grams of buckwheat flour, a teaspoon of baking powder and a half teaspoon of baking soda, a half teaspoon of sea salt, a teaspoon of sugar, 300 grams of buttermilk, one egg and a teaspoon and a half of vanilla extract.
Put your frying pan on low heat, mix dry ingredients first. Fix the buttermilk by mixing it with a tablespoon of apple cider vinegar, egg and vanilla extract. Add the mixture to the bowl with dry components, make everything smooth by whisking, do not worry if it seems quite thin. A bit of coconut oil or butter into the skillet, medium heat. Your healthy buckwheat pancakes are almost done. Enjoy!

Tasty breakfast on a buckwheat diet? Let’s cook some buckwheat porridge. A special one you will love for sure. I usually fix a large portion and have the remains for later too. Have you ever soaked buckwheat groats overnight? It is healthier and saves a lot of time while cooking. So put a cup of whole groats in cold water and tomorrow you will find them soft. Time to rinse them, drain and put into the pot. Medium heat, stirring a bot, in 3 minutes they will smell like toast.

Add some salt, cinnamon and about 300 ml of milk (you may replace it with water if you want). Simmer for a while, the milk has to be fully absorbed. Time for making the dish brighter with seasoning. You can experiment here a lot! Pumpkin seed – honey, raisins – maple syrup, nutmeg – yogurt, brown sugar – berries etc.
This buckwheat breakfast literary helps me to survive autumn and winter. Hope you will like it too!
