Hi!  It’s Eden again. How many of you are eating healthy breakfasts? Unfortunately, I don’t have enough time for making breakfasts, I just try to do everything quickly and don’t miss my bus. But, I think that it is a huge mistake to miss the breakfasts. I want to change something and begin my days with healthy food. What healthy breakfast recipes do you know? What are dishes on your opinion better for breakfast? Which products will rich your organism with energy? And which products you should better leave for another part of the day? Breakfast is a main meal during the day. A lot of us think, that it's okay to miss it or maybe don't have enough time to eat it. So how to solve this problem and start eating breakfast? For breakfast, we should choose something light because it is the first meal of the day and meanwhile full of vitamins.

Breakfast starts the metabolism and allows you to burn calories throughout the day. Thanks to breakfast you will increase the chance of healthy eating until the evening. When preparing a diet breakfast, remember to choose wholesome cereal products.

Actually, during the diet, you should forget about any hard eating. So maybe you could try homemade coconut muesli? All you need is:

1. Oats (5 cups)

2. Coconut flakes (60 g)

3. Hazelnuts (60 g)

4. Sweet cranberries (120 g)

And of course packet of coconut milk.

You need put all ingredients in a container and mix. Add coconut milk. Please make a note, that if you do not have coconut milk, you can use simple one or just water. And after mixing this all ingredients you have a bowl of 130 calories.

Another simple recipe for a meal is easy to make eggs like an omelet. Just mix 3-4 eggs with milk and add few fresh herbs like parsley. That's it.

You need:

  • 1 1/4 cups whole-wheat flour, spooned and leveled, 1 cup old-fashioned rolled oats, 1/4 cup flaxseed meal (available at natural-food stores), 1/4 cup pecans, 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon kosher salt, 1 cup plain low-fat yogurt, 1/2 cup packed light brown sugar, 3 tablespoons unsalted butter, melted, 1 tablespoon grated orange zest, plus 1/4 cup orange juice, 1 large egg, 1 teaspoon pure vanilla extract, 2 cups fresh blueberries or one 8-ounce bag frozen blueberries

Step 1
Heat oven to 375° F. Line a standard 12-cup muffin tin with paper liners. In a food processor, process the flour, oats, flaxseed meal, pecans, baking powder, baking soda, and salt until finely ground.

Step 2
In a large bowl, whisk together the yogurt, sugar, butter, orange zest and juice, egg, and vanilla. Add the flour mixture and mix just until incorporated (do not overmix). Fold in the blueberries.

Step 3
Divide the batter evenly among the muffin cups. Bake until a toothpick inserted in the center comes out clean, 22 to 25 minutes.
