Lemon drizzle cake

  • 100 g softened butter
  • 175 g self-raising flour
  • 1 tsp baking powder
  • 175 g golden caster sugar
  • 2 large eggs
  • 6 tbsp milk
  • finely grated rind of 1 large lemon

For the icing

  • juice of 1 large lemon
  • 100 g golden caster sugar


  1. Preheat the oven to 180 degrees

  2. Butter the sides of the cake pan, line the bottom with parchment paper

  3. Tip all the cake ingredients into the bowl of a stand mixer and beat for 2-3 minutes, until homogenous.

  4. Dump the mixture into the pan, even out the surface with a spatula. Bake for 30-40 minutes

  5. While the cake is baking, prepare the icing: mix the lemon juice with sugar, pour the mixture onto the cake while it is still hot, leave to cool.

  6. Cut the cake into 15 squares.
