Classic vegan burrito

A very tasty Mexican dish, which is convenient to take with you. The filling can be various, but traditionally it is prepared from legumes and vegetables. It is usually served with guacamole and salsa.


  • 1 pc. Onion
  • 2 cloves Garlic
  • 1 pc. Tomato
  • 2 tbsp. Vegetable oil
  • 400 gr. Canned beans
  • 1 tsp. Cumin
  • 1 tsp. Oregano
  • 3/4 tsp. Salt
  • 3 pcs. Salad leaves
  • 3 pcs. Cherry tomatoes
  • 1/2 pcs. Lime
  • 1 pc. Avocado ripe


  • Peel the onions and garlic. Onion cut into thin half-rings, finely chop the garlic. Cut the tomato into cubes.
  • In a pan, heat 2 tbsp. vegetable oil, add the onion and fry over medium heat for 5 minutes, stirring often. Then add chopped tomatoes, garlic, cumin, oregano, salt and cook for another 5 minutes. Tomato sauce should thicken.
  • Add beans from the jar (without liquid), and cook for about 3 more minutes.
  • So, the main filling is ready. Now prepare the vegetables - rinse the lettuce leaves, slice avocado and cherry tomatoes. You text the juice from half a lime.
  • Just before wrapping a burrito, it is necessary to heat up the tortillas. Hold the tortilla on a hot skillet for 10 seconds on each side. Begin to lay out the stuffing. First put a leaf of lettuce (you can also use spinach, arugula). Top with 2 tbsp. l beans, and on top of it - a cherry tomato.
  • Top with a few slices of avocado and pour a teaspoon of lime (or lemon) juice.
  • Fold the side edges of the tortilla and press them against the filling.
  • With your thumbs, lift the bottom edge of the cake, cover it with the filling, and roll the burrito away from you.
  • To make it easier to eat, you can wrap the burrito in foil. Cut in half the burritos before serving.
