Roasted Burrito with Pumpkin


  • 1 piece Butternut squash
  • 1 piece Zucchini
  • 1 piece Fresh corn
  • Olive oil to taste
  • Salt to taste
  • Ground black pepper to taste
  • 4 pieces Corn tortillas
  • 2 cans Black beans
  • Rice to taste
  • 2 pieces Tomatoes
  • 2 heads Onion
  • 2.5 tablespoons Sour cream


  • Prepare the oven by putting it to warm at an average temperature.
  • Peel the pumpkin and zucchini. In half, divide the nutmeg and zucchini, mix with corn and olive oil, sprinkle with salt and pepper.
  • Send all this to the oven, the vegetables should be quite soft.
  • Heat the cakes in the microwave, and in a saucepan, fry the black beans for a little, stretching them slightly with a fork.
  • For a burrito, you need some rice, a bean puree, which you get, diced vegetables.
  • Put all this in the middle of the tortillas.
  • Sprinkle with grated cheese, add tomatoes and sprinkle with finely chopped onions.
  • Do not forget to put sour cream so that the burrito is well soaked. Bend the ends of the cakes, and now - a tasty dish is ready!
