Greetings! It’s Anna. I was asking my previous question about soups and how to prepare them. But I forgot to add that it should be vegetable soups for diet. As the summer is still outside, I want to use as much season products as possible for my soups. I believe that it will make them nutritious and this meal will give me a lot of energy for the entire day.
I’ve read that this is extremely useful for our health and bodies to eat something light like soup in small amounts every day. It will increase your metabolism and improve the work of the gastrointestinal tract. But not all the recipes are good. Sometimes people add some bad seasonings, which ruin all the taste and usefulness of the soup.

Young courgettes – 2 pcs.,
Half of the stalk of leeks,
Carrots – 2 pcs.,

How it cooks:
In a saucepan pour 1,2-1,5 litres of water and put on the fire. In boiling water put chopped carrots, potatoes and leeks. Cook for about 10-15 minutes.
Add large chopped zucchini and cook for another 7-10 minutes.
Remove the soup from the heat, add parsley and whisk with a blender until mashed. Put again on the fire, add salt, pepper, when it starts boiling, immediately remove from heat.
Serve it while hot. Bon Appetit!

1. Preheat an oven at medium heat.
2. Add oil and onion, cook for 3 minutes.
3. Add smoked paprika, oregano, garlic powder, salt, pepper and bay leaves and cook it for 1 minute.
4. Now add potato, carrot and tomatoes. Stir them and wait until it boils.
5. After it add corn and zucchini. Leave for 5 minutes.
6. Serve with parmesan and yoghurt.

Well, soup recipes isn’t a big problem nowadays. I can recommend you one very tasty vegetable diet soup, it’s with cabbages.
So, you need: 5 carrots, chopped, 3 onions, chopped, 2 (16 ounce) cans whole peeled tomatoes, with liquid, 1 large head cabbage, chopped, 1 (1 ounce) envelope dry onion soup mix, 1 (15 ounce) can cut green beans, drained, 2 quarts tomato juice, 2 green bell peppers, diced, 10 stalks celery, chopped
You need just 45 min to cook it.
Place carrots, onions, tomatoes, cabbage, green beans, peppers, and celery in a large pot. Add onion soup mix, tomato juice, beef broth, and enough water to cover vegetables. Simmer until vegetables are tender. May be stored in the refrigerator for several days.
